3-4 lb chuck roast

1 cup balsamic vinegar

1/2 cup beef broth

1/4 cup brown sugar

1/4 cup soy sauce

2 tbsp Dijon mustard

1 tbsp Worcestershire sauce

4 cloves garlic, minced

1 large onion, sliced

2-3 sprigs fresh rosemary (or 1 tsp dried)

2-3 sprigs fresh thyme (or 1 tsp dried)

Salt and pepper to taste

1 tbsp olive oil

Prep the Roast: Pat the chuck roast dry with paper towels. Season generously with salt and pepper on all sides.

    Sear the Meat: Heat olive oil in a large skillet over medium-high heat. Once hot, sear the roast for about 4-5 minutes on each side until nicely browned. This step builds flavor.

      Mix the Glaze: In a bowl, whisk together balsamic vinegar, beef broth, brown sugar, soy sauce, Dijon mustard, Worcestershire sauce, and minced garlic until well combined.

        Layer Ingredients in the Slow Cooker: In your slow cooker, place the sliced onion at the bottom. Place the seared roast on top of the onions.

          Add the Glaze: Pour the balsamic mixture over the roast. Add the fresh rosemary and thyme on top.

            Cook: Cover the slow cooker and set it to low. Cook for 8-10 hours, or until the roast is fork-tender.
