Slow Cooker Chicken Alfredo Lasagna

For the Alfredo Sauce:

1 cup heavy cream

1 cup whole milk

1 cup freshly grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

For the Lasagna:

3 cups cooked and shredded chicken (rotisserie chicken works great)

9-12 lasagna noodles (no-boil noodles recommended)

2 cups ricotta cheese

2 cups shredded mozzarella cheese

1 cup chopped fresh spinach (optional)

1 teaspoon olive oil (for greasing)

Instructions
 

Prep the Slow Cooker: Lightly grease the inside of your slow cooker with olive oil to prevent sticking.

    Make the Alfredo Sauce: In a medium bowl, combine heavy cream, whole milk, minced garlic, garlic powder, dried Italian herbs, and salt and pepper. Whisk until well mixed, then stir in the grated Parmesan cheese until smooth.

      Layer the Ingredients:

        - Start by spreading a thin layer of the Alfredo sauce at the bottom of the slow cooker.

          - Add a layer of lasagna noodles, breaking them if necessary to fit.

            - Spread half of the ricotta cheese over the noodles, followed by half of the shredded chicken and half of the chopped spinach (if using).

              - Pour a portion of the remaining Alfredo sauce over this layer and sprinkle 1 cup of mozzarella cheese on top.

                Repeat Layers: Create another layer by repeating the previous steps — noodles, ricotta, chicken, spinach, Alfredo sauce, and mozzarella cheese. Place the final layer of noodles on top.

                  Finish with Sauce: Pour any remaining Alfredo sauce over the top layer of noodles, ensuring they are well covered. Top with the remaining mozzarella cheese.

                    Cook on Low: Cover and cook on low for 4-6 hours, or until the noodles are tender and the cheese is melted and bubbly.

                      Serve and Enjoy: Once cooked, let the lasagna sit for about 10 minutes before slicing. Garnish with extra parsley or basil if desired, and serve warm!
