1 lb (450g) boneless, skinless chicken thighs

1 cup long-grain white rice

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, chopped

2 ribs celery, chopped

1 cup frozen peas

6 cups low-sodium chicken broth

1 teaspoon dried thyme

1 teaspoon dried parsley

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Chicken: Place the boneless, skinless chicken thighs in the bottom of the slow cooker.

    Add the Vegetables: Layer in the diced onion, minced garlic, chopped carrots, chopped celery, and frozen peas over the chicken.

      Season & Pour the Broth: Sprinkle the dried thyme, dried parsley, salt, and black pepper over the vegetables. Pour in the chicken broth, ensuring the ingredients are submerged.

        Cook in Slow Cooker: Cover the slow cooker and set it to low heat for 6-8 hours, or high heat for 3-4 hours, until the chicken is cooked through and tender.

          Shred the Chicken: About 30 minutes before serving, remove the chicken from the soup using tongs. Shred the chicken using two forks and return the shredded meat to the slow cooker.

            Add Rice: Stir in the long-grain white rice and cover again. Allow to cook on high for an additional 30-45 minutes, or until the rice is tender.

              Finish with Lemon: Once the rice is cooked, stir in the fresh lemon juice for brightness and flavor. Adjust seasoning if necessary.
