2 pounds boneless, skinless chicken thighs

1 cup teriyaki sauce (store-bought or homemade)

2 tablespoons honey

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 bell pepper (any color), sliced

1 small onion, sliced

2 cups broccoli florets

1 teaspoon sesame oil

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Cooked rice (to serve)

Instructions
 

Prep the Chicken: Place the boneless chicken thighs at the bottom of the slow cooker.

    Make the Teriyaki Sauce: In a bowl, whisk together the teriyaki sauce, honey, minced garlic, grated ginger, and sesame oil until well combined.

      Add Vegetables: Add the sliced bell pepper and onion over the chicken in the slow cooker.

        Combine: Pour the teriyaki sauce mixture evenly over the chicken and vegetables, ensuring everything is coated.

          Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.

            Add Broccoli: In the last 30 minutes of cooking, add the broccoli florets to the slow cooker. Stir gently to combine and allow the broccoli to steam and soften.

              Serve: Once cooked, shred the chicken in the slow cooker with two forks and mix well with the sauce and vegetables.
