Ingredients

1 pound boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, diced

2 cloves garlic, minced

4 cups chicken broth

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 lime, juiced

1 cup fresh cilantro, chopped (optional for garnish)

Tortilla chips, for serving

Avocado slices, for garnishing (optional)

Shredded cheese (cheddar or Monterey Jack), for topping (optional)

Instructions

Prepare the Chicken: Place the boneless, skinless chicken breasts at the bottom of the slow cooker.

Add Vegetables: Layer in the diced onion, minced garlic, black beans, corn, and diced tomatoes on top of the chicken.

Season the Soup: Sprinkle in chili powder, cumin, smoked paprika, salt, and black pepper over the vegetables and chicken.

Pour in the Broth: Carefully add the chicken broth to ensure the ingredients stay submerged, allowing the flavors to meld beautifully.

Cooking Time: Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours until the chicken is cooked through and tender.

Shred the Chicken: About 30 minutes before serving, remove the chicken breasts from the crockpot. Shred the chicken using two forks and return it to the soup.

Add Lime Juice: Stir in the fresh lime juice for a burst of flavor and give the soup a final mix.

Serve the Soup: Ladle the hot soup into bowls, garnishing with fresh cilantro, tortilla chips, avocado slices, and shredded cheese if desired. Enjoy the warmth and comfort of your homemade tortilla soup!
