1 lb ground beef (or turkey for a leaner option)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juices)

1 can (6 oz) tomato paste

1 large onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 cups vegetable or beef broth

2 tbsp chili powder

1 tbsp cumin

1 tsp smoked paprika

1 tsp oregano

½ tsp cayenne pepper (adjust to taste)

Salt and black pepper to taste

1 cup corn (frozen or fresh)

Optional toppings: shredded cheese, sour cream, chopped green onions, fresh cilantro

Instructions
 

Prep the Ingredients: Begin by dicing the onion and bell pepper, and mincing the garlic. If using ground beef or turkey, brown it in a skillet over medium heat until cooked through. Drain any excess fat and transfer to the slow cooker.

    Combine the Ingredients: In the slow cooker, add the cooked ground meat, kidney beans, black beans, diced tomatoes with juices, tomato paste, diced onion, minced garlic, diced bell pepper, and corn.

      Season the Chili: Pour in the vegetable or beef broth. Sprinkle in the chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and black pepper. Stir everything together until well combined.

        Slow Cook: Cover the slow cooker and set it on low for 6-8 hours or on high for 3-4 hours. The longer it cooks, the more the flavors will meld together.

          Check for Consistency: About 30 minutes before serving, check the chili. If it's too thick, add a bit more broth. If it's too watery, remove the lid and let it cook down for the final half-hour.
