Slow Cooker Cowboy Casserole

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet (1 oz) taco seasoning

1 cup uncooked elbow macaroni

2 cups beef broth

1 cup shredded cheddar cheese

½ cup sour cream

Salt and pepper to taste

Chopped green onions for garnish

Brown the Meat: In a skillet over medium heat, cook the ground beef with diced onion and minced garlic. Sauté until the beef is fully browned and the onions are translucent. Drain excess fat if necessary.

    Load the Slow Cooker: Transfer the beef mixture to the slow cooker. Add the black beans, corn, diced tomatoes with green chilies, and taco seasoning. Stir well to combine.

      Layer the Macaroni: Add the uncooked elbow macaroni to the slow cooker, followed by the beef broth. Stir gently ensuring that the pasta is submerged in the liquid.

        Cook: Cover the slow cooker and set it to low heat. Cook for 4-6 hours, or until the macaroni is tender. Check occasionally, and add more broth if necessary to prevent drying.

          Add Cheese and Sour Cream: About 30 minutes before serving, stir in the shredded cheddar cheese and sour cream. Mix until the cheese melts and is well incorporated. Season with salt and pepper to taste.

            Serve: Once ready, spoon the casserole into bowls. Garnish with chopped green onions before serving.
