Ingredients

12 oz pasta (e.g., penne or fusilli)

1 cup Hatch green chiles, diced (fresh or canned)

2 cups vegetable or chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

1 cup frozen corn (optional)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Prepare the Slow Cooker: Plug in your slow cooker and set it to low heat.

Sauté Aromatics (Optional): In a skillet over medium heat, add a splash of olive oil. Sauté the diced onion until translucent, about 3-4 minutes. Then add the minced garlic and cook for an additional minute until fragrant. This step enhances the flavors, but you can skip it if you're short on time.

Combine Ingredients: In the slow cooker, combine the pasta, cooked onion and garlic, diced Hatch chiles, broth, heavy cream, corn (if using), cumin, smoked paprika, salt, and black pepper. Stir well to combine everything evenly.

Cook: Cover the slow cooker and cook on low for about 3-4 hours. Check around the 3-hour mark; the pasta should be tender but not mushy. If you want a creamier texture, you can stir in an additional splash of heavy cream during the last hour of cooking.

Add Cheese: Once the pasta is cooked, stir in the grated Parmesan cheese until melted and creamy. Taste and adjust seasoning if necessary.

Serve: Garnish with freshly chopped cilantro and lime wedges. Serve warm and enjoy the delightful, creamy flavors!
