Ingredients

4 boneless, skinless chicken breasts

1 can (28 oz) crushed tomatoes

1 cup heavy cream

1 cup chicken broth

1 medium onion, diced

4 cloves garlic, minced

1 cup fresh basil leaves, chopped (plus extra for garnish)

1 teaspoon dried oregano

1 teaspoon sugar

Salt and pepper, to taste

2 tablespoons olive oil

1 teaspoon red pepper flakes (optional, for some heat)

1 cup grated Parmesan cheese

Cooked pasta, rice, or crusty bread for serving

Instructions

Sauté the Aromatics: Heat the olive oil in a skillet over medium heat. Add the diced onion and sauté until softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Prepare the Slow Cooker: In the slow cooker, combine the sautéed onion and garlic, crushed tomatoes, chicken broth, sugar, oregano, red pepper flakes (if using), and half of the chopped basil. Stir to mix everything well.

Add the Chicken: Season the chicken breasts with salt and pepper, then nestle them into the tomato mixture. Ensure the chicken is fully submerged in the sauce for maximum flavor and moisture.

Cook the Chicken: Cover the slow cooker and cook on low for 5-6 hours or on high for 3-4 hours, until the chicken is cooked through and tender.

Finish the Sauce: Once the chicken is cooked, carefully remove it from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.

Make it Creamy: Stir in the heavy cream and Parmesan cheese, mixing well until the sauce is creamy and combined. Taste and adjust seasoning with additional salt and pepper if needed.

Add Fresh Basil: Stir in the remaining chopped basil for fresh flavor.

Serve: Ladle the creamy tomato basil chicken over cooked pasta, rice, or serve with crusty bread for dipping. Garnish with additional fresh basil and a sprinkle of Parmesan cheese.
