1.5 lbs beef stew meat (cut into bite-sized pieces)

1 lb baby potatoes (halved)

6 cloves garlic (minced)

1/2 cup unsalted butter (cut into pieces)

1 medium onion (chopped)

2 tbsp fresh rosemary (chopped, or 1 tbsp dried rosemary)

2 tbsp fresh thyme leaves (or 1 tbsp dried thyme)

1/2 cup beef broth

1 tbsp soy sauce

1 tsp black pepper

1 tsp salt

1 tsp paprika

1 tbsp olive oil

Sear the Beef: In a large skillet, heat olive oil over medium-high heat. Add the beef stew meat and sear it on all sides until browned, about 5-7 minutes. This step intensifies flavors, so do not skip it! Transfer the meat to the slow cooker.

    Prepare the Vegetables: In the same skillet, add chopped onions and baby potatoes. Sauté for about 3-4 minutes until the onions become translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Layer in the Slow Cooker: Place the onion, potatoes, and garlic mixture on top of the beef in the slow cooker.

        Add Flavorings: In a small bowl, mix the beef broth, soy sauce, rosemary, thyme, black pepper, salt, and paprika. Pour this mixture over the meat and vegetables in the slow cooker.

          Butter It Up: Dot the top with pieces of butter. This will melt and create a rich, garlicky sauce throughout the cooking process.
