3-4 pounds boneless pork loin or shoulder

8 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons fresh parsley, chopped

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon black pepper

1 medium onion, sliced

1 cup chicken broth

2 tablespoons balsamic vinegar

1 tablespoon Dijon mustard

1 tablespoon honey (optional)

Prepare the Pork Roast: Pat the pork roast dry with paper towels. In a small bowl, combine the minced garlic, chopped rosemary, thyme, parsley, olive oil, salt, and pepper to create a herb paste.

    Season the Meat: Rub the herb mixture all over the pork roast, ensuring to cover all sides thoroughly. For best results, let it marinate covered in the refrigerator for at least 1 hour (or overnight if possible).

      Sauté the Onions: In a skillet over medium heat, add a drizzle of olive oil and sauté the sliced onions until they become translucent, about 5 minutes. This step adds flavor and depth to the dish.
