2 lbs beef chuck roast, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

4 cloves garlic, minced

2 cups beef broth

1 can (14.5 oz) diced tomatoes, undrained

4 fresh hatch green chiles, roasted, peeled, and chopped (or 1 can of diced green chiles)

2 medium carrots, sliced

2 medium potatoes, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Sear the Beef: In a large skillet, heat olive oil over medium-high heat. Season the beef cubes with salt and pepper, then add to the skillet. Sear the beef on all sides until browned (about 5-7 minutes). Transfer the beef to the slow cooker.

    Sauté Vegetables: In the same skillet, add the diced onion and garlic. Sauté for 2-3 minutes until softened and fragrant. Transfer the onion and garlic to the slow cooker, along with any remaining oil and juices from the pan.

      Add Remaining Ingredients: To the slow cooker, add the beef broth, diced tomatoes, chopped hatch chiles, sliced carrots, diced potatoes, cumin, smoked paprika, oregano, and additional salt and pepper to taste. Stir everything to combine.

        Cook the Stew: Cover the slow cooker and set it to low. Cook for 7-8 hours or high for 4-5 hours, until the beef is tender and the flavors are well blended.
