Slow Cooker Honey Garlic Chicken

2 lbs boneless, skinless chicken thighs

¾ cup honey

½ cup soy sauce (low sodium preferred)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon crushed red pepper flakes (optional for a kick)

Salt and pepper, to taste

2 tablespoons cornstarch (for thickening, optional)

2 tablespoons water (for thickening, optional)

Sliced green onions, for garnish

Sesame seeds, for garnish

Instructions
 

Start by placing the chicken thighs into the slow cooker. Make sure they are evenly spread out.

    In a medium bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, and crushed red pepper flakes (if using).

      Pour the honey garlic sauce over the chicken thighs, ensuring each piece is well-coated.

        Cover the slow cooker with a lid and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and easily shredded with a fork.

          If you prefer a thicker sauce, about 30 minutes before serving, mix the cornstarch and water in a small bowl until smooth. Stir this mixture into the slow cooker and cook on high for an additional 30 minutes to thicken the sauce.

            After cooking, shred the chicken gently using two forks and stir it back into the sauce. Season with salt and pepper to taste.

              Serve the chicken over steamed rice or quinoa, drizzling extra sauce from the slow cooker on top.

                Garnish with sliced green onions and sesame seeds for a beautiful presentation.
