4 bone-in or boneless pork chops (about 1 inch thick)

Salt and pepper, to taste

1 tablespoon olive oil

1/2 cup honey

1/4 cup Dijon mustard

1/4 cup soy sauce (low sodium preferred)

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon apple cider vinegar

1/2 teaspoon black pepper

1 cup sliced onions (about 1 medium onion)

Fresh parsley, for garnish (optional)

Season the Pork Chops: Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper.

    Brown the Pork Chops: Heat the olive oil in a skillet over medium-high heat. Add the pork chops and sear for about 3-4 minutes on each side until they are golden brown. Remove from heat and set aside.

      Prepare the Sauce: In a medium bowl, whisk together honey, Dijon mustard, soy sauce, minced garlic, dried thyme, apple cider vinegar, and black pepper until well combined.
