Ingredients

2 lbs boneless, skinless chicken thighs

1 cup hot honey (store-bought or homemade)

1/4 cup soy sauce

3 tablespoons apple cider vinegar

2 cloves garlic, minced

1 teaspoon ground ginger

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (adjust to taste)

1 cup chicken broth

4 hamburger buns

1 cup coleslaw mix (optional, for topping)

1/4 cup sliced green onions (for garnish)

Pickles (for serving, optional)

Instructions

Prepare the Chicken: Place the boneless chicken thighs in the slow cooker. Ensure they are spread out evenly.

Mix the Sauce: In a medium bowl, combine the hot honey, soy sauce, apple cider vinegar, minced garlic, ground ginger, black pepper, and red pepper flakes. Whisk until well combined.

Add the Liquid: Pour the honey-soy mixture over the chicken thighs in the slow cooker. Then, add the chicken broth to keep the chicken moist while cooking.

Cook the Chicken: Cover the slow cooker with its lid, and set it to cook on low for 5-6 hours, or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.

Shred the Chicken: Once cooked, remove the chicken from the slow cooker and place it on a cutting board. Using two forks, shred the chicken into bite-sized pieces.

Thicken the Sauce: If you prefer a thicker sauce, pour the remaining liquid from the slow cooker into a saucepan. Simmer on medium heat until reduced to your desired consistency, about 10-15 minutes.

Assemble the Sandwiches: Place a generous portion of shredded chicken on the bottom half of each hamburger bun. Drizzle with the thickened hot honey sauce.

Toppings: If desired, add coleslaw on top of the chicken for crunch and freshness. Sprinkle with sliced green onions for an added flavor boost. Top with the other half of the bun.

Serve: Serve warm with pickles on the side for an extra kick. Enjoy your Sweet & Spicy Slow Cooker Hot Honey Chicken Sandwiches!
