1 package frozen pierogi (about 16 oz, any variety)

1 lb kielbasa, sliced into 1/4-inch pieces

1 large onion, diced

2 cloves garlic, minced

1 cup sauerkraut, drained and rinsed

1 cup shredded cheese (cheddar or a cheese blend)

1 tsp smoked paprika

1/2 tsp black pepper

2 tbsp olive oil

1/2 cup sour cream (for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Ingredients: In a skillet over medium heat, heat the olive oil. Add diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute. Remove from heat and set aside.

    Layer the Ingredients: In the slow cooker, add half of the sauerkraut to cover the bottom. Layer half of the kielbasa slices over the sauerkraut. Then, add half of the frozen pierogi on top of the kielbasa. Sprinkle half of the smoked paprika and black pepper on top, followed by half of the cheese.

      Repeat the Layers: Repeat the layers with the remaining sauerkraut, kielbasa, pierogi, spices, and cheese.

        Cook: Cover the slow cooker and cook on LOW for 4-6 hours or HIGH for 2-3 hours, until the pierogi are tender and the kielbasa is heated through.

          Serve: Once done, give the dish a gentle stir. Serve hot with a dollop of sour cream on top and garnish with chopped fresh parsley.
