Ingredients

2 lbs beef stew meat (such as chuck roast), cut into bite-sized pieces

1 cup beef broth

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons Worcestershire sauce

2 tablespoons soy sauce

1 tablespoon Dijon mustard

2 teaspoons dried thyme

1 teaspoon dried rosemary

½ teaspoon black pepper

1 tablespoon olive oil (for browning the meat)

2 tablespoons cornstarch (optional, for thickening)

1 tablespoon water (optional, for cornstarch mixture)

Chopped fresh parsley (for garnish)

Instructions

Prep the Beef: Season the beef stew meat generously with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Brown the beef on all sides, working in batches if necessary. This step enhances the flavor of the beef.

Layer the Ingredients in the Slow Cooker: Once browned, transfer the beef to the slow cooker. Add the chopped onion, minced garlic, beef broth, Worcestershire sauce, soy sauce, Dijon mustard, thyme, rosemary, and black pepper. Stir well to combine.

Cook: Cover the slow cooker and set it on low. Cook for 6-8 hours or on high for 3-4 hours until the beef is tender and the flavors meld together beautifully.

Thicken the Sauce (Optional): If you prefer a thicker sauce, mix the cornstarch with the water in a small bowl until smooth. In the last 30 minutes of cooking, stir in the cornstarch mixture to the slow cooker. Allow it to thicken.

Serve: Once the beef is tender and the sauce is thickened (if using cornstarch), give it a final stir. Serve hot, garnished with chopped fresh parsley. Pair with mashed potatoes, rice, or crusty bread to soak up that delicious sauce.
