8 oz elbow macaroni

2 cups smoked Gouda cheese, shredded

1 cup sharp cheddar cheese, shredded

4 tablespoons unsalted butter

1/4 cup all-purpose flour

4 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

1/2 cup Panko breadcrumbs

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Begin by cooking the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour, stirring constantly for about 2 minutes until it forms a thick paste (roux).

      Add the Milk: Gradually whisk in the whole milk, ensuring no lumps form. Continue to whisk for about 5-7 minutes until the mixture thickens and coats the back of a spoon.

        Add the Seasonings: Stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.

          Incorporate the Cheese: Reduce the heat to low and slowly add in the smoked Gouda and sharp cheddar, stirring continuously until the cheeses are fully melted and the sauce is creamy.

            Combine Pasta and Sauce: Fold the cooked macaroni into the cheese sauce, mixing well to ensure every piece is coated in that delicious, creamy goodness.

              Prepare the Topping: In a small bowl, mix the Panko breadcrumbs with the olive oil until the breadcrumbs are evenly coated.

                Assemble & Bake: Preheat your oven to 350°F (175°C). Transfer the mac and cheese to a greased baking dish and sprinkle the Panko mixture evenly on top.

                  Bake: Bake in the preheated oven for about 25-30 minutes, until the top is golden brown and crispy.

                    Garnish and Serve: Remove from the oven and let it cool slightly. Garnish with fresh chopped parsley before serving.
