Smoky Chipotle Black Bean Chili

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 medium carrots, diced

2 celery stalks, diced

2 cans (15 oz each) black beans, rinsed and drained

1 can (14 oz) crushed tomatoes

2 tablespoons chipotle in adobo sauce, chopped

1 tablespoon ground cumin

1 tablespoon smoked paprika

1 teaspoon dried oregano

1 teaspoon chili powder

Salt and black pepper, to taste

3 cups vegetable broth

1 tablespoon Worcestershire sauce (or vegan alternative)

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Sour cream or vegan yogurt (for serving, optional)

Instructions
 

Heat the Oil: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 5 minutes until it turns translucent.

    Add Vegetables: Stir in the minced garlic, red and green bell peppers, carrots, and celery. Cook for an additional 5-7 minutes, stirring occasionally, until the vegetables are soft.

      Spice It Up: Add the chipotle in adobo sauce, cumin, smoked paprika, oregano, chili powder, salt, and black pepper. Cook for 2-3 minutes until the spices become fragrant.

        Combine Beans and Tomatoes: Pour in the black beans, crushed tomatoes, and vegetable broth. Stir well to combine all ingredients.

          Simmer: Bring the mixture to a boil, reduce the heat to low, and add Worcestershire sauce. Cover and let it simmer for at least 30 minutes, stirring occasionally. This allows the flavors to meld beautifully.
