Ingredients

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons chipotle chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

1 tablespoon lime juice

Salt and pepper, to taste

8 small corn tortillas

1 avocado, sliced

1 cup shredded red cabbage

1/2 cup fresh cilantro, chopped

Lime wedges, for serving

Optional: sour cream or Greek yogurt, for topping

Instructions

Marinate the Shrimp: In a bowl, combine the olive oil, chipotle chili powder, smoked paprika, garlic powder, onion powder, ground cumin, lime juice, and salt and pepper to taste. Add the shrimp and toss until evenly coated. Let it marinate for at least 15 minutes to absorb all those smoky flavors.

Cook the Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp in a single layer (cook in batches if necessary) and sauté for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.

Warm the Tortillas: In another pan or directly over the flame, warm the corn tortillas for about 30 seconds on each side until they are pliable.

Assemble the Tacos: On each tortilla, place a few shrimp, top with slices of avocado, a handful of shredded red cabbage, and a sprinkle of fresh cilantro.

Serve: Serve the tacos immediately with lime wedges on the side. If desired, add a dollop of sour cream or Greek yogurt for a creamy finish.
