Ingredients

1 pound chicken breast, cut into strips

2 cups cornflake cereal, crushed (without gluten if needed)

1 cup buttermilk

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper (adjust for spice level)

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon Dijon mustard

2 tablespoons olive oil

Cooking spray or extra oil for baking

Instructions

Marinate the Chicken: In a large bowl, combine the buttermilk, Dijon mustard, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Add the chicken strips to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 30 minutes (up to 4 hours for better flavor).

Prepare the Coating: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or spray with cooking spray. In a shallow dish, add the crushed cornflake cereal.

Coat the Chicken: Remove the marinated chicken from the refrigerator. Let excess marinade drip off before rolling each piece in the crushed cornflakes until fully coated. Press lightly to adhere.

Arrange and Bake: Place the coated chicken strips on the prepared baking sheet. Drizzle or lightly spray the chicken with olive oil to promote crispiness.

Bake the Chicken: Bake in the preheated oven for 15-20 minutes or until the chicken is cooked through and the coating is golden brown and crispy. Flip the strips halfway for even cooking.

Serve: Remove from the oven and let rest for a few minutes. Serve your Smoky Cornflake Chicken Strips with your favorite dipping sauce. Enjoy them warm with a side of fresh veggies or a crunchy salad!
