2 cups elbow macaroni

4 tablespoons unsalted butter

1/4 cup all-purpose flour

2 cups whole milk

2 cups shredded smoked Gouda cheese

1 cup shredded sharp cheddar cheese

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

1 cup breadcrumbs (panko recommended)

1/4 cup grated Parmesan cheese

2 large eggs

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Cook the elbow macaroni according to package instructions until al dente, then drain and set aside.

    Make the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Once melted, add the flour and whisk together to form a roux; cook for about 1-2 minutes until light golden in color. Gradually add the whole milk, whisking constantly until the mixture is smooth and thickened.

      Add the Cheeses: Remove the saucepan from heat and stir in the smoked Gouda and sharp cheddar cheese until melted and creamy. Add in the smoked paprika, garlic powder, salt, and pepper. Combine well.

        Combine Pasta and Sauce: Add the cooked elbow macaroni to the cheese sauce and stir until the pasta is well coated. Allow it to cool for about 10-15 minutes.

          Prepare the Baking Dish: Preheat your oven to 400°F (200°C). Grease a mini muffin tin with cooking spray or butter.

            Form the Bites: In a large bowl, whisk together the eggs. Once the macaroni mixture has cooled slightly, stir in the beaten eggs. Using a spoon or a small ice cream scoop, fill each muffin cup with the macaroni and cheese mixture, pressing down slightly to ensure they hold their shape.

              Prepare the Topping: In a separate bowl, mix together the breadcrumbs and grated Parmesan cheese. Sprinkle a generous amount of the breadcrumb mixture on top of each filled muffin cup.
