8 small corn tortillas

4 large eggs

1 cup roasted hatch green chilies, chopped

1 cup cooked chorizo sausage

½ cup crumbled feta cheese

½ cup fresh cilantro, chopped

1 avocado, sliced

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Lime wedges for serving

Prepare the Filling: In a medium skillet, heat the olive oil over medium heat. Add the cooked chorizo and sauté for about 2–3 minutes until it's heated through and slightly crispy.

    Scramble the Eggs: In a bowl, whisk together the eggs, smoked paprika, salt, and pepper. Pour the egg mixture into the skillet with the chorizo. Add the chopped hatch green chilies. Cook, stirring gently until the eggs are scrambled and cooked to your desired firmness (about 4-5 minutes).

      Warm the Tortillas: While the eggs are cooking, heat another skillet over medium heat. Place the corn tortillas in the skillet one at a time, warming each for about 30 seconds on each side until soft and pliable.

        Assemble the Tacos: Once the tortillas are warmed, fill each with a generous scoop of the smoky egg and chorizo mixture. Top with crumbled feta cheese, slices of avocado, and fresh cilantro.
