S'mores Cheesecake Recipe

Ingredients
  

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsweetened cocoa powder

½ cup unsalted butter, melted

⅓ cup granulated sugar

For the cheesecake filling:

3 (8-ounce) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

½ cup mini marshmallows

½ cup chocolate chips (semisweet or milk chocolate)

For the topping:

1 cup heavy whipping cream

2 tablespoons powdered sugar

½ cup mini marshmallows

½ cup chocolate sauce

Graham cracker crumbs for garnish

Instructions
 

Prepare the crust:

    - Preheat your oven to 325°F (162°C).

      - In a mixing bowl, combine the graham cracker crumbs, cocoa powder, melted butter, and granulated sugar. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to form a crust. Use the back of a measuring cup to pack it tightly.

          - Bake the crust for 10 minutes, then remove and allow to cool slightly.

            Make the cheesecake filling:

              - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

                - Gradually add in the granulated sugar and beat until well combined.

                  - Mix in the vanilla extract, followed by the eggs one at a time, making sure to mix well after each addition.

                    - Stir in the sour cream until smooth. Gently fold in the mini marshmallows and chocolate chips.

                      Assemble the cheesecake:

                        - Pour the cheesecake filling into the cooled crust, spreading it evenly.

                          - Bake in the preheated oven for 55-65 minutes, or until the center is set but slightly jiggly.

                            - Turn off the oven and crack the door open, letting the cheesecake cool slowly in the oven for an hour to prevent cracks.

                              Chill the cheesecake:

                                - After cooling, remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight for the best results.

                                  Prepare the topping:

                                    - In a medium mixing bowl, whip the heavy cream with an electric mixer until soft peaks form.

                                      - Gradually add in the powdered sugar and continue to whip until stiff peaks form.

                                        Assemble the final touch:

                                          - Spread the whipped cream evenly over the chilled cheesecake.

                                            - Sprinkle mini marshmallows on top and use a kitchen torch to toast them for a few seconds until golden brown (optional).
