For the Chicken Filling:

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

1 small red onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon ground cumin

Salt and pepper, to taste

1 cup shredded cheese (cheddar or Monterey Jack)

8 large flour tortillas

For the Smothering Sauce:

2 cups enchilada sauce (store-bought or homemade)

1 cup sour cream

1 teaspoon lime juice

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Chicken Filling: In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes, red onion, garlic, chili powder, cumin, salt, and pepper. Mix until everything is well combined.

      Assemble the Burritos: Lay a tortilla flat and spoon about 1/2 cup of the chicken mixture into the center. Sprinkle 2 tablespoons of cheese on top, then fold in the sides and roll it up tightly. Repeat this for all tortillas.

        Prepare the Smothering Sauce: In a separate bowl, combine the enchilada sauce, sour cream, and lime juice. Stir until smooth.

          Bake the Burritos: Spread a thin layer of the smothering sauce on the bottom of a baking dish. Place the burritos seam-side down in the dish. Pour the remaining smothering sauce over the top, ensuring each burrito is generously covered. Sprinkle the remaining cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.

              Serve: Remove the burritos from the oven and let them rest for a few minutes. Garnish with fresh cilantro before serving.
