1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk

1/3 cup unsalted butter, melted (plus extra for greasing)

2 large eggs

1/4 cup honey

1/2 cup corn kernels (fresh or frozen)

1/2 teaspoon cayenne pepper (optional for a kick)

For the Honey Butter:

1/2 cup unsalted butter, softened

1/4 cup honey

Pinch of sea salt

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a mini muffin tin with melted butter or cooking spray.

    Mix Dry Ingredients: In a large bowl, combine the cornmeal, flour, sugar, baking powder, salt, and cayenne pepper (if using). Whisk until well mixed.

      Prepare Wet Ingredients: In a separate bowl, whisk together the buttermilk, melted butter, eggs, and honey until smooth.

        Combine Ingredients: Pour the wet mixture into the dry mixture, and stir gently until just combined. Fold in the corn kernels to incorporate evenly without overmixing.

          Fill Muffin Tin: Spoon the cornbread batter into the prepared mini muffin tin, filling each cup about two-thirds full.

            Bake: Bake in the preheated oven for about 12-15 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.

              Prepare Honey Butter: While the poppers are baking, prepare the honey butter. In a medium bowl, mix together the softened butter, honey, and a pinch of sea salt until creamy and smooth. Set aside.
