Ingredients

8 oz elbow macaroni

4 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 cup cream cheese, softened

2 cups whole milk

1/2 cup unsalted butter (1 stick)

1/2 cup all-purpose flour

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp mustard powder

1/2 tsp paprika

Salt and black pepper to taste

1 cup breadcrumbs (for topping)

1/4 cup grated Parmesan cheese (for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Pasta: In a large pot, boil salted water and cook the elbow macaroni until just al dente, according to package instructions. Drain and set aside.

Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour to create a roux. Cook for 2-3 minutes, stirring constantly, until lightly golden.

Add Dairy: Slowly whisk in the milk and cream cheese, stirring until smooth. Continue to cook, whisking often, for about 8-10 minutes until the mixture thickens.

Incorporate Cheese: Reduce the heat to low and add the sharp cheddar and Gruyère cheese. Stir until completely melted and smooth. Season with garlic powder, onion powder, mustard powder, paprika, salt, and black pepper to taste.

Combine Pasta and Sauce: Fold the cooked macaroni into the cheese sauce until well coated.

Prepare for Baking: Pour the macaroni and cheese mixture into a greased 9x13 inch baking dish.

Make the Topping: In a small bowl, mix together the breadcrumbs, grated Parmesan cheese, and a drizzle of melted butter (optional). Sprinkle the topping evenly over the macaroni and cheese.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until bubbly and the top is golden brown.

Serve: Let it cool for a few minutes before serving. Enjoy your creamy Southern-style mac and cheese!
