1 cup quinoa, rinsed

2 cups water or vegetable broth

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 small red onion, finely chopped

1 jalapeño, seeds removed and diced (optional for spice)

1 avocado, diced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Lettuce or mixed greens (optional, for serving)

Cook the Quinoa: In a medium saucepan, bring 2 cups of water or vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes, or until all the liquid is absorbed and quinoa is tender. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    Prepare the Dressing: In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper until well combined.

      Combine the Ingredients: In a large mixing bowl, combine the cooked quinoa, black beans, corn, red bell pepper, red onion, jalapeño (if using), avocado, cherry tomatoes, and cilantro.
