Spaghetti Carbonara with Crispy Bacon

400g spaghetti

200g high-quality bacon, chopped

3 large eggs

100g Pecorino Romano cheese, finely grated

50g Parmesan cheese, finely grated

2 cloves garlic, minced

Fresh ground black pepper, to taste

Salt, to taste

Fresh parsley, chopped (for garnish)

Extra virgin olive oil (for drizzling)

Prepare the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve about 1 cup of the pasta water before draining.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon until it’s crispy and golden brown, about 5-7 minutes. Stir occasionally to ensure even cooking. Once crispy, remove the bacon with a slotted spoon, leaving the fat in the skillet, and place it on a paper towel to drain.

      Make the Sauce: In a mixing bowl, whisk together the eggs, grated Pecorino Romano, and Parmesan cheese until well combined. Set it aside.

        Combine Ingredients: Add the minced garlic to the bacon fat in the skillet and sauté for about 1 minute until fragrant (be careful not to burn it). Reduce the heat to low. Once the spaghetti is cooked and drained, add it to the skillet with the garlic and fat. Quickly pour in the egg and cheese mixture, tossing rapidly to combine. The residual heat from the pasta should cook the eggs without scrambling them. If the sauce is too thick, add some reserved pasta water, a bit at a time, until you reach your desired creamy consistency.

          Final Touches: Stir in the crispy bacon, ensuring it’s evenly distributed. Season with plenty of fresh ground black pepper and salt if necessary.

            Serve: Plate the spaghetti carbonara and garnish with additional grated cheese, chopped parsley, and a drizzle of extra virgin olive oil. Serve immediately while hot and creamy.
