200g bacon (or guanciale), cut into small pieces

4 large eggs

100g grated Parmesan cheese (plus extra for serving)

50g Pecorino Romano cheese, grated

Freshly cracked black pepper, to taste

Salt (for pasta water)

2 cloves garlic, finely chopped (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Spaghetti: In a large pot, bring salted water to a boil. Add spaghetti and cook until al dente, according to package instructions. Reserve about a cup of the pasta cooking water before draining.

    Crisp the Bacon: In a large skillet over medium heat, add the bacon pieces. Sauté until they become crispy and golden brown, about 6-8 minutes. If using garlic, add it during the last two minutes of cooking to prevent burning.

      Prepare the Sauce: In a mixing bowl, whisk together the eggs, Parmesan, and Pecorino Romano. Add a generous amount of freshly cracked black pepper. This mixture will create a creamy sauce when combined with the pasta.
