8 oz spaghetti

2 cups fresh spinach, chopped

1 cup sun-dried tomatoes, packed in oil, drained and chopped

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the spaghetti and set aside.

    Prepare the Cream Sauce: In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

      Add Sun-Dried Tomatoes: Add the chopped sun-dried tomatoes to the skillet and cook for 2-3 minutes, stirring occasionally.
