12 oz spaghetti

2 cups fresh spinach, roughly chopped

1 cup sun-dried tomatoes in oil, drained and chopped

1 cup heavy cream

1 cup grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and black pepper to taste

Fresh basil leaves for garnish (optional)

Cook the Spaghetti: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

    Make the Cream Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes until heated through.

        Incorporate Cream and Spinach: Pour in the heavy cream, stirring to combine. Add the chopped spinach and Italian seasoning. Cook until the spinach wilts, roughly 3-5 minutes.

          Mix in Cheese: Reduce the heat to low and gradually stir in the grated Parmesan cheese. Let the sauce simmer until it thickens slightly, about 3-4 minutes. If the sauce is too thick, stir in some of the reserved pasta water to reach desired consistency.

            Combine with Pasta: Add the drained spaghetti to the sauce, tossing well to coat the noodles evenly. Season with salt and black pepper to taste.
