1 medium spaghetti squash (about 3-4 lbs)

2 cups marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Spaghetti Squash: Cut the spaghetti squash in half lengthwise. Use a spoon to scoop out the seeds and some of the stringy insides to create a hollow space.

      Season the Squash: Brush the insides of the squash halves with olive oil. Sprinkle garlic powder, Italian seasoning, salt, and pepper evenly over both halves.

        Roast the Squash: Place the squash halves cut-side down on a baking sheet lined with parchment paper. Roast in the preheated oven for about 30-40 minutes, or until the flesh is tender and easily shredded with a fork.

          Heat the Marinara Sauce: While the squash is cooking, heat the marinara sauce in a small saucepan over medium heat. Stir occasionally until it's warmed through.

            Shred the Squash: Once the squash is cooked, remove it from the oven and let it cool for a few minutes. Using a fork, carefully shred the flesh into spaghetti-like strands.

              Combine Ingredients: In a large mixing bowl, combine the shredded spaghetti squash with the heated marinara sauce. Mix well until the squash is evenly coated.

                Assemble and Bake: Transfer the spaghetti squash mixture back into the empty squash halves. Top generously with shredded mozzarella cheese.

                  Melt the Cheese: Return the stuffed squash to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                    Serve and Garnish: Remove from the oven and let it cool for a minute. Garnish with fresh basil leaves and serve with a sprinkle of grated Parmesan cheese if desired.
