For the Lemon Basil Pesto:

2 cups fresh basil leaves, packed

1/4 cup pine nuts (or walnuts)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Juice and zest of 1 large lemon

1 garlic clove, minced

1/2 cup extra-virgin olive oil

Salt and pepper, to taste

For the Spaghetti:

12 ounces spaghetti (or your choice of pasta)

Salt, for boiling water

Lemon wedges, for garnish

Fresh basil leaves, for garnish

Extra grated Parmesan cheese, for serving

Instructions
 

Prepare the Pesto:

    - In a food processor, combine the basil leaves, pine nuts, Parmesan cheese, lemon juice, lemon zest, and garlic.

      - Pulse until the ingredients are finely chopped.

        - While the food processor is running, slowly stream in the olive oil until the mixture is smooth and creamy. You may need to stop and scrape down the sides of the bowl.

          - Season with salt and pepper to taste. Set aside.

            Cook the Spaghetti:

              - Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.

                - Reserve about 1 cup of the pasta cooking water, then drain the spaghetti.

                  Combine:

                    - In a large mixing bowl, toss the hot spaghetti with the lemon basil pesto. If the mixture seems dry, add a little reserved pasta cooking water to achieve the desired consistency.

                      - Mix well until all the pasta is evenly coated.

                        Serve:

                          - Plate the spaghetti and garnish with extra lemon wedges, fresh basil leaves, and additional grated Parmesan cheese.

                            - Enjoy immediately while warm.
