1 lb (450g) large shrimp, peeled and deveined

2 cups mixed bell peppers (red, yellow, green), sliced

1 cup snap peas, trimmed

1 medium carrot, julienned

3 cloves garlic, minced

1 tsp fresh ginger, grated

3 tbsp soy sauce

1 tbsp oyster sauce

1 tbsp honey

1 tbsp sesame oil

1 tsp cornstarch (optional, for thickening)

2 tbsp vegetable oil

2 green onions, sliced

1 tbsp sesame seeds (for garnish)

Cooked rice or noodles (for serving)

Instructions
 

Prepare the Sauce: In a small bowl, mix soy sauce, oyster sauce, honey, sesame oil, and cornstarch (if using). Stir until well combined and set aside.

    Heat the Pan: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

      Cook the Shrimp: Add the shrimp to the pan in a single layer. Cook for about 2-3 minutes per side or until they turn pink and opaque. Remove the shrimp from the pan and set aside.

        Sauté the Veggies: In the same pan, add a little more oil if necessary. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Add bell peppers, snap peas, and carrots. Stir-fry for about 4-5 minutes, or until veggies are crisp-tender.

          Combine: Return the cooked shrimp to the pan with the veggies. Pour the sauce over the mixture and stir well to combine. Cook for an additional 2 minutes, allowing the flavors to meld and the sauce to slightly thicken.
