1 cup Arborio rice

4 cups whole milk

1/2 cup granulated sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 teaspoon vanilla extract

2 medium apples (preferably Granny Smith or Honeycrisp), peeled, cored, and diced

1 tablespoon unsalted butter

1/4 cup raisins or dried cranberries (optional)

Pinch of salt

For garnish: chopped nuts (such as almonds or pecans) and a sprinkle of cinnamon

Instructions
 

Rinse the Rice: In a fine-mesh sieve, rinse the Arborio rice under cold water for a couple of minutes until the water runs clear. This helps remove excess starch and prevents the pudding from becoming too gummy.

    Cook the Apples: In a large saucepan over medium heat, melt the butter. Add the diced apples and 1 tablespoon of sugar. Sauté for about 5-7 minutes or until the apples start to soften. Sprinkle with cinnamon, nutmeg, and ginger, and stir well to coat the apples. Set aside.

      Prepare the Rice Pudding Base: In a separate large saucepan, combine the rinsed rice, whole milk, remaining sugar, and a pinch of salt. Bring the mixture to a boil over medium heat, stirring frequently to prevent sticking.

        Add the Spices: Once the milk is boiling, reduce the heat to low and stir in the vanilla extract, remaining spices (cinnamon, nutmeg, and ginger). Allow the mixture to simmer uncovered, stirring occasionally, for about 25-30 minutes, until the rice is creamy and tender.

          Incorporate Apples and Optional Add-ins: Once the rice pudding is nearly done, carefully fold in the sautéed apples and raisins or dried cranberries if using. Cook for an additional 5-10 minutes until everything is heated through and well combined.

            Final Adjustments: Taste the pudding and adjust the sweetness if necessary, adding more sugar if desired. If you prefer a thicker consistency, allow it to simmer a bit longer, stirring frequently.
