2 cups grated carrots (about 4 medium carrots)

1/2 cup all-purpose flour (you can substitute with chickpea flour for a gluten-free version)

2 large eggs

1/4 cup chopped fresh cilantro or parsley

1/4 cup grated Parmesan cheese (optional)

1 teaspoon cumin powder

1 teaspoon coriander powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/2 teaspoon baking powder

3 tablespoons olive oil (for frying)

Greek yogurt or sour cream (for serving)

Prepare the Carrots: Start by peeling and grating the carrots. Use a box grater or a food processor for convenience. Place the grated carrots in a clean dish towel and squeeze out excess moisture.

    Mix the Batter: In a large mixing bowl, combine the grated carrots, flour, eggs, cilantro or parsley, Parmesan cheese (if using), cumin, coriander, smoked paprika, baking powder, salt, and pepper. Stir well until all ingredients are thoroughly combined into a thick batter.

      Heat the Oil: In a large skillet, heat the olive oil over medium heat. You want the oil to be hot enough that a small drop of batter sizzles upon contact but not so hot that it begins to smoke.

        Form the Fritters: Using a tablespoon, scoop some of the batter and gently flatten it into a patty shape. Repeat this process, leaving some space between each fritter in the skillet. You may need to do this in batches.

          Cook the Fritters: Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy. Once done, transfer them to a paper towel-lined plate to absorb excess oil. Season lightly with more salt if desired.
