2 teaspoons cream of tartar

1 teaspoon baking soda

½ teaspoon salt

1 tablespoon ground cinnamon

1 teaspoon ground ginger

1 teaspoon ground cardamom

½ teaspoon ground cloves

1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 large egg

1 teaspoon pure vanilla extract

½ cup granulated sugar (for rolling)

2 teaspoons ground cinnamon (for rolling)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, cream of tartar, baking soda, salt, cinnamon, ginger, cardamom, and cloves. Set aside.

      Cream Butter and Sugar: In a large bowl, using a hand mixer or stand mixer, beat the softened butter and 1 ½ cups of granulated sugar together on medium speed until light and fluffy, about 2-3 minutes.

        Add Egg and Vanilla: Add in the egg and vanilla extract, mixing until fully incorporated.

          Combine Mixtures: Gradually add the dry ingredient mixture into the wet mixture, mixing on low speed until just combined. Be careful not to overmix.

            Prepare Rolling Sugar: In a small bowl, combine the reserved ½ cup of granulated sugar and 2 teaspoons of ground cinnamon.

              Form Cookies: Using a tablespoon or small cookie scoop, roll the dough into balls (about 1 inch in diameter). Roll each ball in the cinnamon-sugar mixture until evenly coated.

                Bake the Snickerdoodles: Place the coated dough balls on the prepared baking sheets, leaving about 2 inches of space between each cookie. Bake in the preheated oven for 10-12 minutes or until the edges are set and lightly golden, but the center remains soft.
