Spicy Buffalo Chicken Mac and Cheese

8 oz elbow macaroni

2 cups cooked chicken, shredded (preferably rotisserie)

1 cup buffalo sauce (adjust for spice preference)

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups milk (whole or 2%)

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup blue cheese crumbles (optional)

Chopped green onions or parsley for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute to form a roux, stirring constantly to prevent burning.
