2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup roasted hatch green chilies, diced (mild or spicy based on preference)

1 cup black beans, drained and rinsed

1 avocado, sliced

1/2 cup fresh cilantro, chopped

4 large whole wheat or spinach wraps

1/2 cup Greek yogurt or dairy-free alternative (for topping)

Lime wedges (for serving)

Optional: Additional toppings like shredded cheese or salsa

Instructions
 

Preheat the oven to 425°F (220°C).

    Prepare the sweet potatoes: In a large mixing bowl, toss the diced sweet potatoes with olive oil, smoked paprika, cumin, salt, and black pepper until evenly coated.

      Roast the sweet potatoes: Spread the sweet potatoes in a single layer on a baking sheet. Roast in the oven for about 25-30 minutes, or until they are tender and slightly crispy, tossing halfway through for even cooking. Once done, remove them from the oven and let them cool slightly.

        Assemble the wraps: Lay a whole wheat or spinach wrap flat on a clean surface. Begin by adding a generous scoop of the roasted sweet potatoes in the center, followed by a handful of black beans, diced hatch chilies, avocado slices, and a sprinkle of chopped cilantro.
