1 lb ground turkey

2-3 Hatch green chilis, roasted, peeled, and diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp paprika

½ tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup corn (fresh, canned, or frozen)

1 cup black beans, rinsed and drained

½ cup shredded Monterey Jack cheese

½ cup sour cream or Greek yogurt

4 large whole wheat or spinach wraps

Fresh cilantro, for garnish

Lime wedges, for serving

Prepare Hatch Chilis: If using fresh Hatch chilis, roast them over an open flame until charred. Place in a paper bag to steam for about 10 minutes, then peel off the skin, remove the seeds, and dice them.

    Cook Turkey Mixture: In a skillet over medium heat, add a teaspoon of oil. Sauté the chopped onions until translucent, about 3-4 minutes. Add minced garlic and cook for another minute.

      Add Turkey and Spices: Increase the heat to medium-high and add the ground turkey to the skillet. Break it apart with a spatula and cook until browned, about 5-7 minutes. Sprinkle in cumin, paprika, cayenne, salt, and pepper. Stir well to combine.

        Mix in Chilis, Corn, and Beans: Once the turkey is cooked through, fold in the roasted Hatch chilis, corn, and black beans. Cook for another 2-3 minutes until heated through. Remove from heat and stir in the cheese until melted.

          Assemble the Wraps: Lay a whole wheat or spinach wrap on a flat surface. Spoon some of the turkey mixture onto the center, drizzle with sour cream or yogurt, and top with fresh cilantro.

            Wrap and Serve: Fold in the sides and tightly roll the wrap from the bottom up. Repeat with remaining wraps. Slice in half and serve with lime wedges for an extra burst of flavor!
