Spicy Honey Sriracha Wings

2 pounds chicken wings

1/4 cup Sriracha sauce

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon sesame oil (optional, for extra flavor)

Fresh cilantro or green onions for garnish (optional)

Sesame seeds for garnish (optional)

Instructions
 

Prepare the Wings: Rinse the chicken wings under cold water and pat them dry with paper towels. Place them in a large bowl or a resealable plastic bag.

    Make the Marinade: In a separate mixing bowl, combine the Sriracha sauce, honey, soy sauce, rice vinegar, garlic powder, onion powder, smoked paprika, salt, pepper, and sesame oil (if using). Whisk until well blended.

      Marinate the Wings: Pour the marinade over the chicken wings, ensuring they’re thoroughly coated. Cover the bowl with plastic wrap or seal the bag and marinate in the refrigerator for at least 1 hour, ideally 4 hours or overnight for maximum flavor.

        Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top. This will help the wings become crispy.

          Arrange the Wings: Remove the wings from the marinade (discard the leftover marinade) and arrange them in a single layer on the wire rack. This allows air to circulate around the wings for even cooking.

            Bake: Bake the wings in the preheated oven for 35-40 minutes, flipping them halfway through, until they are golden brown and crispy.

              Optional Glaze: For an extra sticky glaze, transfer the wings to a saucepan after baking. Heat on medium with a few tablespoons of the reserved marinade (freshly made, never use the old marinade that touched raw chicken) and let it simmer for a few minutes until slightly thickened.

                Serve: Remove the wings from the oven. Toss them in the thickened glaze if using, or leave them as is. Garnish with fresh cilantro, green onions, and sesame seeds if desired. Serve immediately with your favorite dipping sauce!
