Spicy Korean BBQ Chicken Bites

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1/4 cup soy sauce

2 tablespoons gochujang (Korean red chili paste)

2 tablespoons honey

1 tablespoon sesame oil

1 tablespoon rice vinegar

4 cloves garlic, minced

1-inch piece of ginger, grated

1 tablespoon vegetable oil (for frying)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the soy sauce, gochujang, honey, sesame oil, rice vinegar, minced garlic, and grated ginger. Add the chicken pieces to the marinade and mix well. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Prepare the Skillet: Heat the vegetable oil in a large skillet over medium-high heat.

      Cook the Chicken: Remove the chicken from the marinade, letting any excess marinade drip off. Place the chicken pieces in the hot skillet in a single layer, working in batches if necessary. Cook for about 5-7 minutes on each side, until the chicken is browned and cooked through, achieving a nice caramelization.

        Glaze with Remaining Marinade: Once the chicken is cooked, reduce the heat to medium-low. Pour the remaining marinade into the skillet and toss the chicken until it’s well-coated and the sauce thickens slightly, around 2-3 minutes.

          Garnish and Serve: Remove the skillet from heat. Transfer the chicken bites to a serving platter, garnish with chopped green onions and sesame seeds.
