1 lb (450g) ground beef (80/20 for flavor)

3 cloves garlic, minced

1 inch piece ginger, grated

1/4 cup soy sauce

2 tablespoons gochujang (Korean chili paste)

1 tablespoon sugar (brown or white)

1 tablespoon sesame oil

1 teaspoon black pepper

1 teaspoon sesame seeds

8 small corn or flour tortillas

1 cup shredded cabbage (green or purple)

1/2 cup diced cucumber

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Beef: In a mixing bowl, combine the ground beef, minced garlic, grated ginger, soy sauce, gochujang, sugar, sesame oil, black pepper, and sesame seeds. Mix until evenly coated and let it marinate for at least 15 minutes to allow the flavors to meld.

    Cook the Beef: Heat a large skillet over medium-high heat. Once hot, add the marinated beef mixture. Cook, stirring frequently, until the beef is browned and cooked through, about 7-10 minutes. Use a spatula to break up the beef into small pieces as it cooks.

      Warm the Tortillas: While the beef is cooking, warm the tortillas. You can do this by placing them directly on a dry skillet for about 30 seconds on each side or wrapping them in foil and placing them in a preheated oven at 350°F (175°C) for about 10 minutes.

        Assemble the Tacos: Once the beef is ready, remove it from heat. To assemble the tacos, take a warm tortilla and add a generous spoonful of the spicy beef mixture. Top with shredded cabbage, diced cucumber, and a few slices of avocado.
