1 lb salmon fillet, skinless, cut into 1-inch cubes

1 ripe mango, peeled and diced

2 tablespoons honey

2 tablespoons soy sauce

1 tablespoon sriracha sauce (adjust to taste)

1 tablespoon lime juice

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

Fresh cilantro or parsley, chopped (for garnish)

Lime wedges (for serving)

Skewers (optional, for serving)

Instructions
 

Prepare the Mango Glaze: In a blender, combine the diced mango, honey, soy sauce, sriracha, lime juice, garlic powder, and ginger powder. Blend until smooth and creamy. Set aside half of the mixture for serving.

    Marinate the Salmon: In a bowl, add the salmon cubes. Drizzle the remaining mango glaze over the salmon and toss gently to coat. Let it marinate for about 15-20 minutes.

      Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully add the marinated salmon bites. Cook for about 2-3 minutes on each side or until the salmon is cooked through and has a nice caramelized exterior. Do not overcrowd the pan; you may need to do this in batches.

        Serve: Once cooked, remove the salmon bites from the skillet and place them on a serving platter. Drizzle the reserved mango glaze over the top.

          Garnish and Enjoy: Sprinkle with chopped cilantro or parsley and serve with lime wedges on the side. If desired, serve on skewers for easy eating!
