Spicy Peanut Zucchini Noodles

4 medium zucchinis

1 cup peanut butter (creamy or crunchy, as per preference)

2 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

2 teaspoons sesame oil

1 teaspoon sriracha (or more for extra heat)

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup water (adjust for desired sauce consistency)

1/4 cup roasted peanuts (roughly chopped)

2 green onions (sliced thinly)

1 teaspoon sesame seeds (for garnish)

Fresh cilantro leaves (optional, for garnish)

Prepare the Zucchini Noodles: Use a spiralizer to create zucchini noodles (zoodles). If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips. Set aside.

    Make the Spicy Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey (or maple syrup), sesame oil, sriracha, minced garlic, grated ginger, and water. Adjust the water amount based on how thick you’d like your sauce to be.

      Combine Zoodles and Sauce: In a large mixing bowl or skillet over medium heat, add the zucchini noodles. Pour the spicy peanut sauce over the zoodles and toss until they are evenly coated.
