8 oz soba noodles

2 tbsp sesame oil

1 cup bell peppers (sliced, any color)

1 cup snap peas

1 cup broccoli florets

3 cloves garlic (minced)

1-inch piece ginger (grated)

1 small onion (sliced)

2 green onions (chopped, for garnish)

2 tbsp soy sauce

1 tbsp sriracha (adjust to taste)

1 tbsp rice vinegar

1 tsp honey (optional)

1 tsp sesame seeds (for garnish)

Salt and pepper to taste

Cook the Soba Noodles: Bring a large pot of water to a boil. Add the soba noodles and cook according to package instructions (usually about 4-5 minutes). Drain and rinse under cold water to stop the cooking process. Set aside.
