4 large ears of corn, husked

3 tablespoons olive oil

2 tablespoons Sriracha sauce (adjust to taste)

1 tablespoon honey or maple syrup

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

¼ cup crumbled feta cheese (optional)

2 tablespoons fresh cilantro or parsley, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Corn: Start by slicing each ear of corn in half lengthwise to create corn ribs. Use a sharp knife and ensure safety by stabilizing the corn with a towel.

    Make the Sriracha Marinade: In a small bowl, mix together the olive oil, Sriracha sauce, honey (or maple syrup), smoked paprika, garlic powder, onion powder, salt, and black pepper until well combined.

      Marinate the Corn: Brush the Sriracha marinade generously over the cut sides of the corn ribs, ensuring they are well coated. Let them sit for about 15-20 minutes to soak up the flavors.

        Preheat the Grill: Preheat your grill over medium-high heat. You can also use an oven or an air fryer if grilling is not an option.

          Grill the Corn Ribs: Place the marinated corn ribs skin-side down on the grill. Grill for about 7-10 minutes on each side, or until they have nice grill marks and are tender. If using an oven, bake at 400°F (200°C) for approximately 25-30 minutes, flipping halfway through.

            Add Feta (optional): If using feta cheese, sprinkle it on the corn ribs during the last 2 minutes of grilling or baking to allow it to slightly melt.

              Garnish and Serve: Once done, remove the corn ribs from the grill. Sprinkle with chopped cilantro or parsley for freshness and serve with lime wedges on the side for drizzling.
