Spicy Sriracha Tuna Melt Quesadillas

1 can (5 oz) of solid white tuna, drained

1/4 cup mayonnaise

2 tablespoons Sriracha sauce (adjust to taste)

1/4 cup diced red onion

1/4 cup diced bell pepper (red or green)

1/4 cup shredded sharp cheddar cheese

1/4 cup shredded mozzarella cheese

4 large flour tortillas

2 tablespoons olive oil (for grilling)

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Salt and pepper to taste

Instructions
 

Mix the Tuna Filling: In a medium bowl, combine the drained tuna, mayonnaise, Sriracha, diced red onion, diced bell pepper, salt, and pepper. Stir until well incorporated and set aside.

    Prepare the Quesadillas: Lay out two flour tortillas on a clean surface. Spread half of the tuna mixture evenly over one tortilla, then sprinkle half of the cheddar and mozzarella cheese on top. Place another tortilla over the top to create a sandwich.

      Cook the Quesadillas: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once the oil is shimmering, gently place one quesadilla in the skillet. Cook for 3-4 minutes or until the bottom is golden brown and crispy. Carefully flip the quesadilla and add another tablespoon of oil if necessary. Cook for another 3-4 minutes until the cheese is melted and the second side is golden brown.

        Transfer & Repeat: Once cooked, transfer the quesadilla to a cutting board and let it sit for a minute. Cut into quarters. Repeat the process with the remaining tortillas and filling, adding more oil to the skillet as needed.

          Serve: Garnish the quesadilla wedges with fresh cilantro. Serve with lime wedges on the side for an added zing. You can also have more Sriracha and mayonnaise on the side for dipping.
