Spicy Szechuan Noodles

8 oz noodles of your choice (preferably egg or udon noodles)

2 tablespoons vegetable oil

2 garlic cloves, minced

1 inch ginger, minced

1 green onion, chopped

1 red bell pepper, sliced thinly

1 carrot, julienned

1 cup bean sprouts

2 tablespoons Szechuan peppercorns

2 tablespoons soy sauce

1 tablespoon chili oil (adjust for spice preference)

1 tablespoon rice vinegar

1 tablespoon hoisin sauce

1 teaspoon sugar

Salt to taste

Sesame seeds (for garnish)

Fresh cilantro (for garnish)

Instructions
 

Cook the Noodles: In a large pot of boiling salted water, cook the noodles according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare the Szechuan Oil: In a small frying pan, heat 2 tablespoons of vegetable oil over medium heat. Add Szechuan peppercorns and sauté for about 2 minutes until fragrant. Remove from heat, strain the oil, and reserve it.

      Stir-fry the Vegetables: In a large wok or frying pan, heat the reserved Szechuan oil over high heat. Add minced garlic and ginger, stirring quickly to avoid burning. Then, add chopped green onions, red bell pepper, and carrot. Stir-fry for about 3-4 minutes until vegetables are tender but still crisp.

        Combine Ingredients: Add the cooked noodles to the wok with the vegetables. Pour in soy sauce, chili oil, rice vinegar, hoisin sauce, and sugar. Toss everything together to ensure the noodles are well-coated and heated through.

          Add Bean Sprouts: Finally, fold in the bean sprouts and cook for an additional minute, allowing them to wilt slightly.

            Serve and Garnish: Plate the Spicy Szechuan Noodles, and sprinkle with sesame seeds and fresh cilantro for an extra burst of flavor. Optionally, add sliced chili peppers for additional heat.
